Erythritol\u00a0is a\u00a0sugar alcohol\u00a0(or\u00a0polyol)\u00a0food additive. It was discovered in 1848 by Scottish chemist\u00a0John Stenhouse. Erythritol was first isolated in 1852. In 1950 it was found in\u00a0blackstrap molasses\u00a0that was fermented by yeast, and it became commercialized as a sugar alcohol in the 1990s in Japan.

It occurs naturally in some fruit and fermented foods.\u00a0At the industrial level, it is produced from glucose by fermentation with a\u00a0yeast,\u00a0Moniliella pollinis. Erythritol is 60\u201370% as sweet as sucrose (table sugar) yet it is almost noncaloric, does not affect blood sugar,\u00a0\u00a0does not cause tooth decay,\u00a0and is partially absorbed by the body, excreted in urine and feces. Under U.S.\u00a0Food and Drug Administration\u00a0(FDA) labeling requirements, it has a caloric value of 0.2\u00a0kilocalories\u00a0per gram (95% less than sugar and other carbohydrates), though nutritional labeling varies from country to country. Some countries, such as\u00a0Japan\u00a0and the\u00a0United States, label it as zero-calorie; the\u00a0European Union\u00a0labels it 0 kcal\/g.
