C&#8217;est \u00e0 la fois une prot\u00e9ine, un excellent colorant alimentaire naturel et un tr\u00e8s bon aliment sant\u00e9.<\/p>\n<h2>Caract\u00e9ristiques alimentaires de la poudre de phycocyanine<\/h2>\n<p><b>La phycocyanine<\/b>&nbsp;est un complexe pigment-prot\u00e9ine de la famille des&nbsp;phycobiliprot\u00e9ines&nbsp;collectrices de lumi\u00e8re, aux c\u00f4t\u00e9s de l&#8217;allophycocyanine et de la&nbsp;phyco\u00e9rythrine.[1]&nbsp;C&#8217;est un&nbsp;pigment accessoire&nbsp;de la&nbsp;chlorophylle. Toutes les phycobiliprot\u00e9ines sont hydrosolubles et ne peuvent donc pas exister au sein de la membrane comme les&nbsp;carot\u00e9no\u00efdes. Les phycobiliprot\u00e9ines s&#8217;agr\u00e8gent plut\u00f4t en amas adh\u00e9rant \u00e0 la membrane, appel\u00e9s&nbsp;phycobilisomes. La phycocyanine pr\u00e9sente une couleur bleu clair caract\u00e9ristique : elle absorbe la lumi\u00e8re orange et rouge, en particulier vers 620&nbsp;nm (selon le type sp\u00e9cifique), et \u00e9met une fluorescence \u00e0 environ 650&nbsp;nm (selon le type \u00e9galement). L&#8217;allophycocyanine absorbe et \u00e9met \u00e0 des longueurs d&#8217;onde plus grandes que la phycocyanine C ou la phycocyanine R. Les phycocyanines sont pr\u00e9sentes chez les&nbsp;cyanobact\u00e9ries&nbsp;(\u00e9galement appel\u00e9es&nbsp;algues bleu-vert).
